Simple ingredients, versatile flavors and textures

Metarom’s aromatic caramels are vegan and can also be clean label. Moreover, they are Halal, Kosher, and ISO 22 000 FSSC certified. The caramels are made simply from water and sugar and contain no artificial flavors. During the caramelization process, by adjusting temperature and heating time, any desired taste profile (floral, rum, nutty, etc.) can be achieved – ranging all the way from dark tones to light. The quantity, type and botanical origin of the sugars also factors in the organoleptic properties of the caramels.

The confectionary, ice cream and pastry industries use Metarom’s aromatic caramels in many different applications. An aromatic caramel can among others be used as a flavoring with the advantage of having a clean labelling since it is not a flavor but brings a caramel taste. The aromatic caramels are in liquid form and can be added directly to the mass during production. Depending on the customer’s needs, texturizing agents such as starch, pectin or carrageen can also be added to create a stickier or gel-like texture. Then, the aromatic caramel can be used as a topping in a product, without it mixing with the rest of the mass.
